Our Story

Our journey began when Don (Papa) discovered the ancient Roman method of pinsa — a lighter, crispier, and more digestible alternative to traditional pizza. Rooted in history and traceable back nearly 2,000 years to ancient Rome, pinsa began as a simple flatbread made from blended grains and baked on hot stone. Today, that tradition lives on through a specialized blend of flours, high hydration dough, and up to a 72-hour slow fermentation. The result is Pinsa Romana — crisp on the outside, airy on the inside, and distinctly different from standard pizza. After experiencing true Roman pinsa firsthand, Don knew North Idaho needed this authentic Italian tradition — and that we weren’t bringing pizza home, we were bringing pinsa.

Sant’Antonio’s is proudly family-owned and operated, built not just as a business but as a legacy. What started as a discovery became something Don wanted to pass down to his grandchildren — a craft rooted in patience, and tradition. Every recipe, every detail of our mobile kitchen, and every pinsa we serve reflects our commitment to building something lasting for the next generation.

Our name honors Saint Anthony the Great, known in Italy as Sant’Antonio Abate, traditionally associated in Rome with fire-based trades, including bakers and pizza makers. His January 17 feast day is celebrated with community bonfires throughout Italy — symbols of warmth, renewal, and community in the heart of winter. That connection to fire reflects the soul of Roman baking culture, where dough, flame, and patience transform simple ingredients into something extraordinary.
