“Pinsa” not pizza

While it might look like a pizza or flatbread, Pinsa di Roma is in a league of its own. Dating back to ancient Rome, the word “Pinsa” comes from the Latin word “pinsere,” meaning “to stretch” by hand. This traditional technique, combined with our unique long-fermentation process, creates a crust that is radically different from your standard dough.

Why Choose Pinsa?

A Healthier Bite:

Our specialized blend of non-GMO soy, wheat, rice and dried wheat sourdough flours—combined with high hydration—results in a crust that is lower in calories, fats, and gluten, and higher in protein than traditional pizza.

The Signature Texture:

Expect a cloud-like interior that is incredibly light and airy, encased in a perfectly crisp, golden exterior.

Easy Digestion:

We let our dough cold-ferment for up to 72 hours. This natural breakdown of starches means it’s much easier on your stomach, leaving you feeling satisfied, never sluggish.

Experience the authentic taste of Rome, right here in Post Falls. It’s not just a meal; it’s a centuries-old tradition.
